Everyone likes cheap and easy.

Especially when it comes to food. Just thought I’d post a quick blog about this since I rarely post recipes, (as well as rarely follow them) but I love to cook. If you’re broke and at least partially health-conscious like me, then you’ll dig this super quick and cheap and easy black bean soup recipe.

I like to keep homemade stock in the freezer, portioned into little tupperwares, but any old chicken or veggie stock will do. Here’s literally how it went:

Cut up half an onion (it don’t matter what kind, what you got lyin’ around?)

Mince two cloves of garlic (fresh is always better, but whatevs.)

Heat some olive oil or your choice of sautee lubricant in a saucepan.

Throw in dem onions, then throw in dem garlics. Sweat it out.

Add about 1-1.5 cups stock (if you’re using the powdered stuff, just follow the directions on the box and heat it up in the microwave first.) I just nuked a container of my frozen stuff in the microwave and tossed it. Bring to a slight boil.

Season. This is to taste, but here’s what I added: two pinches sea salt, a couple liberal cranks of cracked black pepper, red pepper flakes, chili powder, cumin, onion powder, garlic powder, cocao chili blend.

Add 1 can of black beans. (I kept the water in for flava, but it’s up to you. I had to add a couple shakes of base thickener (Wondra is awesome), but the starch from the beans do a really good job of thickening up the soup on their own. Bring it back to a rolling boil, then reduce heat and simmer on med-low for about 5 minutes or so.

Top with any fresh onion ya got lyin’ around, maybe some fresh maters, and a dallop of sour cream. I woulda added fresh cilantro had mine not wilted up in the fridge.

Voila! Seriously. That took, like, 10 minutes. And it cost virtually nothing.
